Crustacean Trio Marinated in Rosé Wine
This crustacean trio served on lettuce with fresh fruit vinaigrette is a refined and tasty dish to share with friends.
Ingredients:
  • ½ lb (250 g) lobster meat, chopped
  • ½ lb (250 g) crabmeat, chopped
  • ½ lb (250 g) northern shrimp, shelled
  • 1 French shallot, thinly sliced
  • 4 fresh strawberries, diced
  • ½ pear, diced
  • 8 chives, sliced
  • ¼ cup (60 ml) grapeseed oil
  • ¼ cup (60 ml) rosé wine
  • 1 tbsp (15 ml) mild honey mustard
  • Lemon sea salt to taste
  • Pepper to taste
  • Whole northern shrimp to garnish
  • 8 strawberries, sliced, to garnish
  • 8 chives to garnish
Method:
  1. Combine crustaceans, shallots, strawberries, pear pieces and chives in bowl until evenly mixed.
  2. Toss with grapeseed oil, rosé wine and mustard. Season with salt and pepper.
  3. Using a spoon, shape tartar into round cake. Garnish with shrimp, strawberry slices and chives.
  4. Serve with lettuce and fresh fruit vinaigrette.
