Crustacean Trio Marinated in Rosé Wine
This crustacean trio served on lettuce with fresh fruit vinaigrette is a refined and tasty dish to share with friends.
Ingredients:
½ lb (250 g) lobster meat, chopped
½ lb (250 g) crabmeat, chopped
½ lb (250 g) northern shrimp, shelled
1 French shallot, thinly sliced
4 fresh strawberries, diced
½ pear, diced
8 chives, sliced
¼ cup (60 ml) grapeseed oil
¼ cup (60 ml) rosé wine
1 tbsp (15 ml) mild honey mustard
Lemon sea salt to taste
Pepper to taste
Whole northern shrimp to garnish
8 strawberries, sliced, to garnish
8 chives to garnish
Method:
Combine crustaceans, shallots, strawberries, pear pieces and chives in bowl until evenly mixed.
Toss with grapeseed oil, rosé wine and mustard. Season with salt and pepper.
Using a spoon, shape tartar into round cake. Garnish with shrimp, strawberry slices and chives.
Serve with lettuce and fresh fruit vinaigrette.
