Maple Syrup Pudding with Strawberries and Whipped Cream

Ingredients:
  • 2 tbsp butter
  • ½ cup sugar
  • 2 eggs
  • ½ cup all-purpose flour
  • ½ cup pastry flour
  • 1½ tsp baking powder
  • ½ tsp salt
  • ½ cup milk
  • ½ cup grated coconut
  • 1½ cup maple syrup from Bas-Saint-Laurent
  • ¾ cup water
  • 2 tsp butter
Method:
  1. Preheat oven to 350°F.
  2. Soften butter in bowl; add sugar and eggs.
  3. Sift together the remaining dry ingredients (except for the coconut).
  4. Alternate adding egg mixture and milk to dry ingredients.
  5. Pour into an 8-inch pan.
  6. In another bowl, combine the maple syrup, water and remaining butter.
  7. Pour over dough mixture and sprinkle with coconut.
  8. Bake for 20 minutes or until golden.
  9. Serve with strawberries and whipped cream.
