Salmon Steak with Cloudberry Coulis

Salmon Steak with Cloudberry Coulis
Ingredients:
  • 1 small onion, minced
  • 2 tbsp (30 ml) butter
  • 1 tbsp (15 ml) fresh ginger, minced
  • 1 tsp (5 ml) garlic flowers, chopped
  • 1 cup (250 ml) cloudberry coulis*
  • ¼ cup (60 ml) water
  • 4 fresh salmon steaks (about 7 oz or 200 g each)
  • Salt and pepper to taste
Method:
  1. In a large pan, fry onions in butter at medium high heat until onions are golden.
  2. Add ginger and garlic flowers.
  3. Deglaze with cloudberry coulis and water.
  4. Bring to a boil and then reduce heat to simmer.
  5. Gently place salmon steaks in pan and simmer for about 3 minutes per side.
  6. Remove steaks and set aside.
  7. Reduce remaining sauce at high heat until syrupy.
  8. Season to taste and serve salmon steaks with sauce.
